Не могу понять эту часть определения "spring lamb" в словаре Merriam-Webster:

"a market lamb born in late winter or early spring and sold fat off the dam usually before July 1st".

Как это "fat off the dam"? Помогите, пожалуйста.

Не очень разбираюсь в животноводстве, поэтому чисто предположение.
Я бы в этом направлении поискал:
dam - это матка же?
Может, что-то вроде
"нагулявшие жир от матки"?
Т.е. кормились, набирали жир [без прикормок], от матки?
Может, кто-то разбирается и подскажет точнее? (или, может, у вас по тексту есть пояснения)

A lamb 'sold fat off the dam' = shorthand for 'sold with its fat obtained entirely from the mother', ie the lamb hasn't yet learnt to feed itself on grass etc, so is reliant on its mother -- as several people have said.
