Поскольку baby - все-таки существо одушевленное, то скорее всего he or she (в зависимости от пола).

Кошка тоже существо одушевленное, но почему-то it.
Вообще-то baby по правилам = it. Другое дело, что как и с кошкой, не думаю, что своего ребенка кто-нибудь называет it.

to Annaa: вот я и начала думать, по аналогии с чем/кем будет именно этот самый infant. это идёт в официальный сборник, так что надо вроде как, чтобы было "по правилам"

эмбрион и младенец (неизвестного пола) - всегда it, но, например, врачей и техников аппаратов УЗИ специально инструктируют: в разговоре с родителями избегать it и говорить your baby.

Нигде я не видела конкретных грамматических определений, как правильно. Известно, что животные it и baby = it. Но child, toddler, teenager - это уже определенно he/she. У меня есть подозрение, что это как-то связано с способностью говорить, но только лишь подозрение. Infant здесь трудно анализировать, поскольку это не полный синоним к baby. Хотя это very small baby/child, это еще и ученик самой ранней ступени начальной школы. В общем не знаю. Я бы использовала he or she, но у меня нет никаких подтверждений, что это правильно.

К этому могу добавить, чтобы избежать конкретизации her или his, часто используется местоименое their. Это значение и в словарях зафиксировано.

2 V: работая преподавателем, поневоле приходится заморачиваться книжками, пока не ткнешь студента в соответствующую страницу, не поверит. А так я ведь и не настаивала на it. И по поводу baby это скорее знание типа "word of mouth", а не из книжек.
